Wipe the fresh red pepper with a wet rag and let it dry. Peel the garlic and wash and dry the ginger. -

Remove the stems from the red pepper and chop into fine pieces. You can also use a blender to break it. -

Chop the garlic and ginger into fine pieces and add them to the chili. -

Stir evenly, cover and ferment at room temperature for two days. -

Put it into a clean, water-free and oil-free bottle and pour in the white wine. Seal and store in refrigerator.
Tips
1: There is no need to wash the red peppers, just dry them with a rag.
2: When beating with a mixer, do not beat it too finely. It is better to have some chili particles.
3: Use water-free and oil-free chopsticks when eating.
