Peel and wash the potatoes. The potato tarts at the night market are all square, and I don’t want to give up the leftovers, so I use the original shape of the potatoes. -

Place a pair of chopsticks under the potatoes and cut the potatoes horizontally. -

Turn over and cut diagonally. -

Put a little salt in the water, soak the cut potatoes in the water to remove the starch, drain the soaked potatoes and tie them with bamboo skewers. -

Put oil in a pot and heat it until it is 60% hot. -
