1
Preparation: half a fresh Qingyuan chicken, cleaned. -
2
Put an appropriate amount of water in an electric cooker to a boil, add ginger and green onion, and add chicken giblets to cold water and cook. -
3
After the water boils, add the chicken and scald it up and down so that the chicken is evenly heated. -
4
Then when the water boils slightly again, turn off the heat and soak for 30 minutes (the soaking time depends on the size and weight of the chicken). -
5
This is soaked chicken. Take it out and soak it in ice water or put it in a fresh-keeping bag and put it in quick-frozen ice for twenty minutes. The effect is the same (my family doesn’t drink ice much, so I put it in the refrigerator If I don’t have ice cubes or anything like that, I usually use the second method). -
6
This is a chicken that has been taken out of the freezer with crisp skin and tender meat. -
7
Tear the chicken into pieces. -
8
Prepare salt-baked chicken powder and minced garlic (today there is a 9-year-old handsome boy who doesn’t eat onions and coriander, so I didn’t prepare it). -
9
Add sesame oil, soy sauce, salt-baked chicken powder and minced garlic and mix well. -
10
Place the chicken offal on the side of the plate (without the onion and coriander, the taste is also very different). -
